General

Why are Springerle called Springerle?

The origin of the name of this traditional pastry is not clearly established. It is presumed that the name is derived from the fact that "Springerle" "jump" (springen) during baking, meaning they rise due to the small feet that form on the dough. The "LE" in "Springerle" is a typically Swabian suffix used to indicate that something is small.

Note dated 12.08.2026: With a heavy heart, we have decided to stop shipping our products to most EU countries. This is due to the regulations of the new EU Packaging and Packaging Waste Regulation (PPWR), which create administrative hurdles and enormous fixed costs for small businesses and manufacturers (including the need for local authorized representatives in each individual destination country)—regardless of the number of packages shipped. For us as a small business, these costs are not economically viable, which is why we have limited our shop shipping to the aforementioned countries with immediate effect. Thank you for your understanding!

How long does delivery take?

Delivery times depend on where you live. You can find all the information regarding the delivery of our Springerle cookies and molds on our shippingpage. Generally speaking, we can ship molds faster than Springerle cookies, as we are constantly baking our Springerle fresh.

Model

Are the molds and cutters dishwasher safe?

No. The heat in the dishwasher will cause the molds and cookie cutters to warp.

Do you have wooden models that one can buy?

We currently do not offer any models made of wood. We have specialized in models made of biopolymer. These are particularly stable and easy to clean.

I have an old model and am looking for a cookie cutter for it; how should I proceed?

Measure the motif. The cutter should slightly exceed the size of the motif. In our shop, you will find cuttersin various sizes.

Unsure about the size? Feel free to visit our shop in Münsingen or one of our stands and bring your mold with you! We would be happy to advise you.

You can find out where we will be with our Springerle stand under Markets, Fairs, Events.

Are your models 3D printed?

Yes, our models are printed using a 3D printer. We use a food-safe biopolymer as our printing material. This makes them sturdy and easy to clean.

Furthermore, we are able to quickly create custom model designsfor weddings, birthdays, anniversaries, etc.

Do you sell molds or cutters for bear paw cookies?

Yes, we currently have bear paw molds in two sizes in our range. You can find these by searching for bear paws in the shop.

Which model motifs are suitable for beginners?

That cannot be generalized. Some people find it easier to work with intricate mold designs, while others have better success baking with simple mold designs.

In principle, all our molds are very well suited for beginners, as they can be cleaned very easily (unlike wooden or wax molds) with running warm water and a vegetable brush. This is an advantage if the dough gets stuck in the mold, which can happen to beginners more often than to experienced Springerle bakers.

How can I order a personalized model motif?

We offer both personalized molds for baking yourself and personalized Springerle (i.e., ready-baked ones). If you would like to order your logo, coat of arms, name, or another motif as a mold or Springerle, for example, please contact us. You can find information on this at Personalized Springerle and Molds.

How do I clean the molds and cutters?

Our molds and cookie cutters are sturdy and can be washed like dishes. Wash them by hand using a soft sponge or a soft brush (vegetable brush or hand washing brush) and dish soap. Then allow them to air dry or wipe them dry with a tea towel.

Caution: Do not place the molds and cookie cutters in the sun or on a heater to dry! Prolonged exposure to heat may cause them to warp.

How stable are your models?

Our customers sometimes report that their wax molds did not last long. Our biopolymer molds, however, are durable and will bring you joy for a long time. They can also be rinsed off under warm water.

Baking Springerle

The "feet" on my Springerle cookies always come out crooked; why is that?

There can be several reasons for this. The most common ones are:

The base of the Springerle is unevenly moist.
The mold was already pressed in at an angle during shaping.
The oven distributes heat unevenly.
The Springerle are very small and tip over due to their light weight.

Are there also Springerle without anise?

Yes, you can replace anise with other spices, such as vanilla, cardamom, speculoos spice, coffee powder, cocoa powder, and others. We also frequently offer Springerle in various flavors.

For the Springerle in our shopthe flavor is always specified.

My springerle are hard after baking; how do I make them soft?

If your Springerle have unintentionally become too hard, you can

(A) place them in an environment with high humidity or

(B) put them in the microwave at 500 watts for about 20 seconds.

This will make the molded cookies soft again.

Why is there no hartshorn salt in your Springerle recipe?

We bake Springerle without hartshorn salt or other leavening agents, because we make a dough that is not heavy (in terms of weight). As a result, the leavening power of the eggs alone is sufficient for the Springerle to develop nice, high feet.

Why should the eggs for springerle be 8–10 days old?

The older an egg is, the runnier the egg white becomes. It is then easier and faster to whip.

How do the "feet" form on Springerle cookies?

After being molded, Springerle are dried on baking parchment for 24 hours. During drying, the top surface that comes into contact with the air becomes firm and stable. The underside, which lies on the baking parchment, remains moist. During baking, the dough inside the Springerle expands and escapes through the soft underside. This creates the "foot" at the bottom and causes the Springerle to "spring" upwards.

For your Springerle to develop feet, it is therefore extremely important that they dry for long enough.

How do my springerle get the scalloped edge that yours have?

For square Springerle, a wavy pastry cutter is ideal. You can find this in our shop under Baking Accessories.

For round, oval, heart-shaped, and star-shaped Springerle, we offer perfectly fitting cookie cutters. You can add the matching cutter to your cart on the product page of the respective mold.

Separate mold cutters can be found in the shop under Cookie Cutters.

How much vanilla do you add to vanilla Springerle?

We recommend: 2–3 cm of a whole vanilla bean, finely ground together with a tablespoon of powdered sugar.

Can I store Springerle outdoors?

Yes! When it is cool outside, the balcony or terrace is perfect for storage. However, ensure that the Springerle are well-packed and protected from animals.
